Discover the excellences of Lazio with Giancarlo Caldesi at Welcome Italia 2018.
We are waiting for you all at the Royal Horticultural Halls (October 5th at 4 pm) to enjoy his cooking show.
As a businessman he is the owner of the Caldesi Group of Restaurants and Cookery Schools with restaurants in London’s Marylebone and culinary mecca, Bray, in Berkshire. A passionate chef Giancarlo can often be found cooking at the restaurants and entertaining diners with his stories behind the Italian regional dishes he creates.
His live work includes a number of UK and International food festivals such as Masterchef Live, Foodies Festivals, Good Food and Wine Shows and Taste Italia where he entertains audiences with his lively yet informative cookery demonstrations.
With his wife Katie he has written several cookery books about Italian regional cousine, such as ‘Rome: Centuries in an Italian Kitchen’. In this book the duo present their interpretations of classic dishes, like Katie’s Cacio e Pepe (spicy cheese and pepper pasta), alongside family favourites like Spigola in Saltimbocca (seabass with parma ham and sage leaves). Collaborating with Rome’s best chefs, they share modern Italian recipes like Sorbetto di Peperone, a fiery hot chilli sorbet that reflect the heat and colour of this bustling city. This is an impressive, fresh look at Rome s cuisine.
He also is a regular contributor to articles for National newspapers and food magazines with a specialism on the food of Tuscany, where he was born.
In 2010 Giancarlo was awarded the ‘Ordine Della Stella Della Solidarieta Italiana’ (The Order of Italian Solidarity) by the Italian government, one of the highest honors an Italian chef can receive.

London One is at every London’s events as well as international ones such as Sanremo or Radio City MIlan, by also becoming BBC supplier. The True Italian Taste project – funded and promoted by the Ministry of Economic Development and ITA (Italian Trade Agency) as part of the “The Extraordinary Italian Taste” campaign and coordinated by Assocamerestero – started in 2016 in USA, Canada and Mexico and involves now Belgium, France, Germany, Luxembourg, The Netherlands, Spain, Switzerland and UK, in collaboration with the ICCAs of these Countries.
The project aims to tell consumers all over the world about the benefits of true Italian products and the importance of the link between foods and the places they come from.

The cuisine of Lazio has an important feature: popular extraction.
‘Pasta amatriciana’, ‘maccheroni’, ‘asparagus’, ‘guanciale’, ‘porchetta’, ‘coppa’ and ‘trippa’ are just some of many traditional dishes of this region.
Roman cuisine is particularly well known thanks to recipes that are part of a so-called ‘poor dishes’ tradition. The best known delicacies are ‘carciofi alla romana’, ‘coda alla vaccinara’, ‘coratella’ d’abbacchio’, ‘grattachecca’ and ‘spaghetti alla carbonara’.
This region is not short of wines either. ‘malvasia di Candia’ and ‘trebbiano toscano’ are some of the most grown white grapes. Among red wines, some of the finest products are ‘cesanese’, ‘ciliegiolo’, ‘Montepulciano’, ‘merlot’, ‘cabernet sauvignon’ and ‘barbera’.

Welcome Italia is proud to support the BFI (British Film Institute) in the first ever comprehensive UK retrospective of Bellocchio’s films.
Marco Bellocchio is one of the best filmmakers to have emerged from Italy in the 1960s. His work is a great combination of moral questioning, satire and culture.
In July the BFI and Ciné Lumière will hold the retrospective of his films, in partnership with Film Italia and the Italian Cultural Institute.
Bellocchio will be at the BFI stage to talk about his career, alongside some of his classic movies.

‘The Times’ describes him as ‘this country’s best non-Italian Italian chef’… We are proud to announce Theo Randall as the special guest of 2018 edition!
He is the owner of ‘Theo Randall at the InterContinental’, nonetheless, he is best known for being awarded a Michelin star at The River Café in London.
His international reputation is on the rise and he is increasingly in demand for events in Asia (Bangkok, Qatar and Singapore) and the Middle East (Dubai and Abu Dhabi).
In his free time, the chef travels around Italy in order to create new recipes and discover the original Italian taste.
During the fair the chef will perform in our special Cookery Theatre: he will use some of the exhibitors’ products to create new exciting dishes.
